We’ve all been there — packed shoulder-to-shoulder in a crowd, the anticipation building as the lights dim and the opening chords of your favorite songs echo through the venue. But just as the energy peaks, your stomach starts to protest. After hours of excitement, hunger inevitably sets in, and while the thrill of the night is still alive, you realize you’re running on empty. That’s when you appreciate a pre-show meal — a meal that won’t slow you down but gives you the energy to keep going, encore after encore.
Scratch and Dumbo has emerged as Poblacion’s newest destination for those seeking exceptional cuisine paired with a vibrant atmosphere. This dual-concept venue, which opened its doors in early October 2024, seamlessly marries the bold flavors of New York-style smash burgers at Scratch with the cozy, intimate ambiance of a speakeasy at Dumbo. Co-founded by nightlife experts Marco and Joey Viray, alongside Patrick Santos, this innovative concept blends casual yet refined dining with masterful mixology. While Scratch stands out as the go-to for gourmet comfort food, Dumbo delights with its artfully crafted agave-based cocktails, promising to enhance every aspect of your night out, from pre-show bites to post-show toasts.
Protein Plates from Scratch

At the forefront is Scratch, the creative endeavor of partners Marco Viray, Joey Viray, and Patrick Santos—well-known names behind popular New York-inspired ventures like Nolita Joe’s and LES Bagels. Drawing inspiration from Marco’s vibrant life in New York and iconic burger joints like 7th Street Burgers, Scratch is poised to become the ultimate destination for the biggest fans of smash burgers.
Crafted by Chef Mikko Reyes, everything at Scratch is made from scratch — from the soft potato buns to the freshly mixed beef patties and house-made sauces. The menu is refreshingly straightforward yet exceptionally crafted, focusing on authentic flavors. A standout is the Classic Smash burger, featuring a perfectly smashed beef patty, melted cheese, and a special house sauce that delivers a tangy kick. It’s the kind of burger that hits all the right notes — flavorful and utterly satisfying.
Beyond Burgers: Sides and More

But the experience doesn’t stop at burgers. Scratch also offers a tantalizing selection of sides that perfectly complement the main event. Imagine sinking your teeth into crispy truffle fries, seasoned to perfection with a sprinkle of sea salt and a drizzle of truffle oil that elevates the classic snack to gourmet status. These golden fries provide a satisfying crunch, making them an ideal accompaniment to your burger.
If you’re in the mood for something a bit heartier, the loaded nachos are a must-try. Piled high with gooey cheese, spicy jalapeños, and a generous drizzle of sour cream, these nachos are the ultimate crowd-pleaser, perfect for fueling up before a much-awaited concert. Each bite is a flavorful explosion, designed to satisfy your cravings while providing that extra boost of energy you need to tackle the excitement of the evening ahead.
A Speakeasy Retreat at Dumbo

Just when you think the pre-show excitement couldn’t reach new heights, a hidden door behind Scratch unveils Dumbo, an intimate speakeasy inspired by Brooklyn’s Down Under the Manhattan Bridge Overpass. Co-managed by Patrick Santos, Dumbo reflects the eclectic essence of Brooklyn’s neighborhood charm, offering an atmosphere that feels both familiar and refreshingly new.
The interior, designed by Regina Santos, draws inspiration from renowned spaces like Soho House and Dumbo House in New York. Each detail, from the print-on-print wallpaper to the inviting seating arrangements, creates an immersive experience that transports guests to a stylish retreat, complementing the creative cocktails crafted by mixologist Jaz Jan Juan. In Dumbo, every sip tells a story, ensuring that your evening is as memorable as it is delightful.
Cocktails That Tell a Story

At Dumbo, the focus shifts to agave spirits — particularly tequila. Each drink is a narrative in its own right, drawing inspiration from New York’s drink menu and notable landmarks, ensuring that every sip transports you to a different facet of the city.
Ella Fitzgerald: A homage to the legendary singer who celebrated Manhattan’s city scene, this cocktail is a twist on the classic Amaretto Sour. Enhanced with mezcal and adorned with rice paper art featuring DUMBO, it’s as pleasing to the eyes as it is to the palate.
Guason Stairs: Inspired by the famous stairs where Joaquin Phoenix’s Joker danced, this drink reflects bold hues and even bolder flavors, capturing the enigmatic essence of the Joker. With its striking presentation and complex taste, it’s not just a cocktail; it’s both a conversation starter and a flavor adventure rolled into one.
Spice or Nice: A playful twist on the classic Tommy’s Margarita, this cocktail highlights smoky, spiced, and sour notes. It’s a tantalizing choice that dares you to decide: will it be spice or nice tonight? Perfectly balanced, it serves as an engaging prelude to an evening filled with excitement.

Operating hours for Scratch and Dumbo are Tuesday to Sunday, from 6:00 PM to 3:00 AM, making it the perfect spot for dinner and late-night gatherings. Whether you’re gearing up for a concert, looking for a new date night locale, or simply seeking a fresh spot to hang out with friends before the show, this dual-concept venue has got you covered.
