In a harmonious blend of various flavors and textures, Lusso has kicked off its collaboration with Nomad Caviar with a night of various dishes. With wine-pairings from some of the world’s most delectable selections, each complementing the myriad of flavors from savory to sweet. Greeting each guest with a warm welcome for the night was a generous bump of Nomad Caviar, which proved to be a burst of smooth buttery goodness at each bite.
In an official press release, it was noted that “With Lusso Signature Creations featuring Nomad Caviar available all month and a new dish inspired by Chef Margarita Forés’ travels, Lusso is gently reframing what indulgence can look like. Think: Meals not just for milestones, but for the days in between.”
Lusso Executive Chef Valery Anthony delves deeper into the philosophy of this special collaborative menu, saying, “Chef Margarita always believed that the best food is the kind you come back to often, not just the kind you save for special dates. This January menu is our way of keeping that spirit alive. It’s thoughtfully crafted, full of flavor, and meant to feel welcoming whether you’re here for a quick bite or staying a little longer.”
Moving on to the apértif, they kicked off the five-course meal with the Nomad Barquillos Cylinders. Served on a plate of seven, crispy, thin, yet sweet and somewhat milky barquillos wrap a chive cream cheese, topped with yet another generous amount of caviar. With this, guests begin their dinner on a somewhat indulgent yet satisfying bite.
Following this is a course of pasta, where guests have the option between Ikura & Caviar Beurre Blanc Pasta and Chilled Ikura & Caviar Truffle Pasta. While both options are made with angel hair pasta (that’s wonderfully al dente), these two dishes offered completely different textures and flavor profiles. When the beurre blanc was created to have a warm sauce of emulsified butter, creating a rich and silky textural experience, the chilled ikura & caviar truffle pasta offered a refreshing umami taste with its kombu sauce.
However, the star of that night, and surely something that deserves a social all on its own, was the Chicken Schnitzel. When Lusso say that the dish is “comfort food done right,” they absolutely mean it. Coated in a breading of panko crumbs, the chicken cutlet remains juicy and flavorful even in spite of being battered down into a thin patty. This flavor profile is only further enhanced by a generous helping of the restaurant’s house-made butters, which guests can pick from a selection of four: Grape Véronique Butter (inspired by Lusso’s signature Chicken Véronique), Herb Garlic Butter, Black Truffle Butter, and Calamansi Brown Butter.
“The Chicken Schnitzel feels especially personal because it comes from the places my mom loved discovering through food, then bringing back to the table in a way that feels like home,” explained Amado Forés, son of the late Chef Margarita Forés and founder of AF Hospitality. This dish will be available at all Lusso restaurants starting January 26, 2026 (Monday) for Php. 980.
Just when you thought you’d had enough caviar, Lusso serve you their house-made with Fior di Latte cheese, drizzled with olive oil and sprinkled with Maldon salt. Guests have an option to top their scoop of gelato with yet another healthy dose of caviar for that sweet-salty combination.
